Maple Walnut Cream Pudding
I've never thought of having a maple pudding before, but this recipe did not disappoint. The end result is a lightly flavored maple pudding that is very creamy and has a perfectly smooth consistency. The walnuts and whipped cream are just an added bonus that makes it that much better!

Instructions

In a medium saucepan, scald 1 3/4 c milk with the maple syrup.

Combine remaining milk, cornstarch and salt. Gradually add to the first mixture while stirring constantly. Cook for 25 minutes.

Beat eggs slightly with a whisk. Pour a little bit of the hot mixture into the eggs while whisking quickly. Pour eggs into the hot mixture on the stove. Cook another 3-4 minutes while whisking constantly.

Remove from heat and add vanilla. Mixing well to combine.

Pour into a serving dish and sprinkle with walnuts while pudding is still hot. Set aside to cool.
Whipped Cream

In a stand mixer, whip the whipping cream until soft peaks form. Gradually add the sugar on low. Turn the mixer up to medium and whip until stiff peaks form.

Pipe the whipped cream onto the pudding before serving.
