Mediterranean Green Bean Salad
A super flavorful and healthy side dish that pairs well with just about any sandwich or grilled protein. This dish is also chock-full of nutrients and probiotics. This recipe can easily be altered by adding in items such as artichoke hearts, olives or a cured meat to make it a one dish meal.

fresh green beans
(trimmed, cut in half and sliced length wise)

red bell pepper
(sliced thin and cut in half)

red onion
(sliced thin)

sundried tomatoes
(chopped)

crumbled feta cheese
Sauce

full fat plain greek yogurt

mayonaise

(zested)

(juiced (more for taste))

Instructions

Trim the green beans then cut in half and slice lengthwise down the "seam"

Halve the whole bell pepper then slice into thin strips. Cut them in half again.

Slice onion thin and chop sundried tomatoes.

In a large sauce pan, bring salted water to a full rolling boil

Prepare a large bowl of ice water (an ice bath) to cool the beans
-
Add green beans to boiling water and allow to cook for about 3 minutes. Do not over cook, the beans are supposed to be crisp

Immediately drain the beans in strainer and submerge in ice bath

once cooled drain in collander and pat dry with paper towels

In large bowl mix beans, peppers, onions, tomatoes and feta cheese.
Sauce

In small bowl add all sauce ingredients
-
Add sauce mixture to bean mixture and combine.
