Meringue Banana split

So this one was different for me. I have tried it a few different ways. Baked the meringue as a dome and then I piped it on and torched it then I baked the meringue in to a cookie form. I found with my family and my kids their favorite was with the meringue cookies and the yellow chiffon cake. So I loved making this and figuring out what was the best way to work with it and what went over well with my family.

Ingredients
  • 9 large eggs whites at room temp (226g baker's measure)
  • Meringue Vanilla cookies
  • 1 1/2 tsp vanilla bean paste (8g baker's measure)
  • 1/4 tsp cream of tartar (Or fresh lemon juice but double the measurement for it to work. 2g baker's measure)
  • 2 1/4 cup granulated sugar (464g baker's measure)
  • Yellow Chiffon Cake
  • 250 g cake flour (this recipe is in bakers measurements )
  • 200 g sugar
  • 6 g salt
  • 12 g baking powder
  • 125 g vegetable oil
  • 125 g egg yolks
  • 188 g water
  • 6 g vanilla
  • 250 g egg whites
  • 125 g sugar
  • 1 g cream of tartar
Instructions
    Meringue Vanilla Cookies
  1. Heat oven to 200 degrees and grease a cookie sheet or line with parchment
  2. Place the egg whites, cream of tartar, and vanilla into a mixing bowl, whisk them together until you have soft peaks
  3. Add in the sugar and keep mixing till you have nice firm glossy peaks
  4. Place in a piping bag and pipe on to your prepared cookie sheets
  5. Bake cookies for 45 minutes remove from oven and cool.
  6. Yellow Chiffon Cake
  7. Preheat over to 350 degrees. Prepare two cake pans with greased and floured sides and parchment bottoms
  8. Sift the dry ingredients together mix with a paddle on low speed then gradually add the oil. until the dry are well moistened
  9. Add the egg yolks, water, and liquid flavoring to the mixture and mix well till combined remover from the mixer. If you don't have a 2nd mixer bowl available, pour this into a separate bowl and wash and thoroughly dry your current mixing bowl.
  10. Add the egg whites and mix until soft peaks then add sugar and cream of tartar.
  11. Once everything is mixed in, turn the mixer up to medium-high \and mix until you have firm moist peaks.
  12. Now fold the meringue into the cake batter
  13. Bake for about 30 to 35 minutes once done take out and place upside down to cool
  14. Cute out your shapes that you want for the bottom of the cake piece and place on the plate
  15. Drizzle on caramel sauce and add some bananas to it and top with another piece of cake
  16. Drizzle the chocolate sauce on the piece of cake and top with bananas and strawberries then place your meringue cookies all around and crumble one on the top

instead of making the meringue cookies you can make a meringue dome or a meringue bowl or even pipe on the meringue and torch it.
