No Bake Nectarine Pie

I found this recipe for a peach pie that sounded really tasty. Since fresh peaches were out of season I decided to give nectarines a try! This pie just looks so inviting to eat and smells sweet. The nectarines give the pie a lot of sweetness, but the crust and a little whip cream help to tone that down!

Ingredients
    Crust
  • 1 1/2 cup graham cracker crumbs (163 g)
  • 1/3 cup sugar (77 g)
  • 6 tbsp melted butter (81 g)

  • 7 large, fresh nectarines, peeled (514 g - can substitute peaches or another similar fruit)
  • 1/2 cup sugar (112 g)
  • 1 tbsp cornstarch (9 g)
  • 1/2 tsp vanilla (3 g)
  • 1/2 cup water (122 g)
  • 3 drops yellow food coloring (optional)
Instructions

  1. Combine all ingredients into a bowl and mix well. Press into the bottom and up the sides of a 9 inch pie pan and chill.

  3. Slice 5 of the nectarines and arrange into the crust.
  4. Mash up or puree the remaining nectarines.
  5. In a small saucepan, combine the cornstarch and sugar. Add the nectarines, water and vanilla, mixing well. While stirring constantly, cook over medium heat until the mixture has thickened and is clear. Remove from heat and allow to cool slightly.
  6. Strain the mixture through a fine mesh sieve. Add a few drops of yellow food coloring and let cool.
  7. Pour over the top of the pie and chill 2-3 hours or until it has set. May serve with whipped cream.
