No Cream Ganache

Ganache is a simple mixture of equal parts chocolate and heavy cream. What if you don't have cream though? Easy, cream is just milk with more butter fats so add butter. Equal milk and butter to equal the chocolate.

Ingredients
  • 1/2 cup whole milk
  • 2 tbsp unsalted butter
  • 4 oz semisweet chocolate
Instructions
  1. Using grater or food processor, shave chocolate down as fine as possible for easy melting
  2. Add butter and milk to pan over medium heat until butter melts and small bubbles form around edge of pan. Do not allow to boil as milk may burn
  3. Pour over chocolate and stir. Allow chocolate to melt.
  4. As this cools, it'll thicken. Should it get too thick use hand mixer to cream again.
