Nut Brittle

Nut Brittle is one of those fun candies that you can completely customize to your flavor tastes and nut preference. I make this every holiday season. In this photo, I used pistachios.

Ingredients
  • 1 1/2 tsp baking soda
  • 1 tsp water
  • 1 tsp flavor extract (This is completely dependent on you, I normally use vanilla or almond)
  • 1 1/2 cup sugar
  • 1 cup water
  • 1 cup light corn syrup
  • 3 tbsp butter
  • 1 lb nuts (If they're large chop them down a little)
Instructions
  1. Butter or parchment paper an extra-large cookie sheet or 2 regular size
  2. Mix baking soda, tsp water, and extract and set aside
  3. Mix sugar, a cup of water, and corn syrup in a pot over medium to medium-high heat stirring occasionally but be sure not to let splatter on pot sides because this could fall back in and ruin your mixture. Cook this to 240 degrees Fahrenheit on a candy thermometer (soft ball stage)
  4. Stir in butter and nuts. and stir continuously until mixture reaches 300 degrees (hard crack stage)
  5. Remove from heat and pour in baking soda mixture and stir. It will become light and foamy.
  6. Pour onto the prepped cookie sheet or half it out if using 2.
  7. Allow to cook completely, break apart and enjoy.
