Nut Caramels
I use to love caramels as a kid, but these are something I haven't seen around much as an adult. When I came across this recipe I was excited to give it a try. I've never seen a nut caramel before but it sounded delicious. These are soft and chewy and packed full of caramel flavor with a nice crunch and added flavor from the nuts. The drizzled chocolate is just a great bonus that makes them even tastier and more elegant.

Ingredients

sweetened condensed milk

light corn syrup

salt

chopped pecans

chopped almonds
(38g)

cup
chopped walnuts
(38g)

unsweetened chocolate
Instructions

In a medium saucepan, combine sweetened condensed milk and the light corn syrup. Bring to a boil over medium heat while stirring constantly.

Boil 15-20 minutes while stirring constantly. The syrup will be thick and caramel colored. Remove from heat.

Add salt and the nut mixture to the syrup and mix well.

Pour into a buttered 8x8 inch pan. Cool at room temperature until firm enough to cut squares.

Over a double boiler, melt the chocolate.

Drizzle over the top of the caramels in the pan. Once cooled, cut into squares, diamonds, or rectangles.
