Open Fresh Strawberry Pie

I love farm-to-table cooking and fresh produce is at the heart of that. Strawberries from the fields can't be beaten.  I do a lot with strawberries in the summer and this ie one of my favorites because it's quick and easy.

Ingredients
  • 1 container of fresh strawberries
  • 1 cup crushed fresh strawberries
  • 1 cup sugar
  • 1 tbsp cornstarch
  • 1 baked pie shell
Instructions
  1. Slice the strawberries into slices. Making sure to remove the tops. Then arrange them in the pie shell.
  2. Boil the crushed strawberries, sugar and cornstarch until transparent.
  3. Power the mixture over the strawberries already in the pie shell while still hot. Chill for 4 hours before serving.
