Pecan Maple Syrup Cake

If you love maple syrup and pecans then you will love this cake!  This cake is loaded with pecans and maple syrup.  This is a very rich and dense cake.  It would be a good dessert for a holiday season like Christmas.

Ingredients
  • 2 1/4 cup cake flour (275g baker's measure)
  • 2/3 cup granulated sugar (133g baker's measure)
  • 3 tsp baking powder (15g baker's measure)
  • 1 tsp salt (6.5g baker's measure)
  • 1 cup maple syrup (315g baker's measure)
  • 1/2 cup shortening (95.5g baker's measure)
  • 1/2 cup milk (121g baker's measure)
  • 4 eggs (200g baker's measure)
  • 1 cup chopped pecans (114g baker's measure)
Instructions
  1. Sift flour, sugar, baking powder, and salt together into a bowl.
  2. Add syrup, shortening, milk and beat for 2 minutes.
  3. Add eggs and beat for 2 minutes.
  4. Add chopped pecans and mix well.
  5. Pour prepared batter into 2 greased and floured 9 inch pans.
  6. Bake on 350 degrees for 30 minutes.
  7. Allow cakes to cool for 10 minutes before inverting them. Then allow cakes to finish cooling on cooling racks before wrapping and placing in the freezer to chill for 30 - 45 minutes before torting them into layers.
