Pineapple Fluff Dessert

This sweet summertime dessert is cool and creamy, and wonderful on its own or all dressed up. I have made it in a souffle dish as well as in ramekins along with a variety of toppings for my guests to make each their own. It has the most amazing fresh pineapple flavor. It has that soft, fluffy, smooth taste and I have made it for many potlucks, church luncheons, baby showers, and parties for years. You will love this recipe and so will your loved ones. Some topping choices are maraschino cherries, toasted pecans, coconut, banana, chocolate syrup, whipped cream, or any other topping you desire. You can also use shortbread cookies or vanilla wafer cookies instead of the graham cracker crust.

Ingredients
  • 1/3 cup lemon juice (77 ml baker's measure)
  • 1 14 oz can sweetened condensed milk (396 g baker's measure)
  • 1/4 tsp salt (1.4 g baker's measure)
  • 4 eggs, separated, room temp (200 g baker's measure)
  • 1 tbsp unflavored gelatin (9 g baker's measure)
  • 2 1/2 cup crushed pineapple, in syrup (567 g baker's measure 20 oz. can do not drain)
  • Crust
  • 1 1/2 cup graham cracker crumbs (150 g baker's measure)
  • 1/3 cup sugar (67 g baker's measure)
  • 6 tbsp butter or margarine, melted (85 g baker's measure)
Instructions
  1. Prepare the graham cracker crust by mixing the crumbs, sugar and melted butter together and pressing in the bottom of the souffle.
  2. Next tear a 20-22 inch piece of foil and fold it in half lengthwise. Wrap around the top edge of the souffle to form a 4 inch collar above the edge of the dish. Tie with string or tape into place. ( If you have a 4 inch cake collar available, you can use that as well.)* You can also prepare individual ramekins the same way.
  3. In a large bowl, beat the egg whites until they are at a stiff peaks, but not dry. Set aside.
  4. In the top of a double broiler, add lemon juice, and sprinkle the gelatin on top to soften. Add slightly beaten egg yolks and salt.
  5. Whisk continuously and cook until the gelatin is dissolved. About 3 minutes
  6. Stir in sweetened condensed milk and the pineapple in syrup until fully combined. Remove the double broiler from heat and remove the top.
  7. Place top of broiler in ice water. Stir mixture until it slightly mounds when dropped from the spoon.
  8. Thoroughly fold gelatin mixture into the egg whites until it is fully incorporated.
  9. Carefully turn the mixture into the prepared dish. Chill in the refrigerator 4-5 hours until firm.
  10. At serving time, carefully remove foil or collar. Can serve just as it is, or you can have some toppings available for guest to add their own.
