Praline Cookies
These cookies are probably one of my favorites. They have the perfect crunch, but also the best chewy center. The pecans make an excellent crunch as well. The praline icing is literally the 'Icing on top'!

Praline Icing

light brown sugar

heavy whipping cream

powdered sugar

Instructions

In a large mixing bowl, combine the butter and brown sugar. Cream together until light and fluffy, about 3-5 minutes. Add in the egg and the vanilla and mix until fully combined.

In a separate bowl, combine the flour, salt, and baking powder. Add that into the butter mixture, and mix well by hand with a rubber spatula.

Add in the chopped pecans and gently mix them until fully combined. Cover the bowl with plastic wrap, and let rest in the fridge for about an hour.

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, set aside.

Form the dough into balls, and set on the tray about 2 inches apart from each other. Bake for about 10 minutes, or until golden brown. Let cool for about 5 minutes.
Praline Icing

Cream together the brown sugar and the heavy whipping cream in a medium sized saucepan over medium heat. Cook until the sugar is dissolved, and the mixture comes to a boil, stirring constantly. Remove from the heat, and whisk in the powdered sugar until smooth. Drizzle over the cookies or dip them.
