Pumpkin Crunch with Maple Cinnamon Glaze

It is that time of year again and I love all things Autumn...the colors, the cool evenings, and the smells.  Also it brings out the desire for pumpkin flavored everything. This recipe does not disappoint. It has all the flavors of Autumn and the feeling of comfort food at its best. This delicious dessert is like eating a flavorful pumpkin pie, a moist fluffy cake, and a delicious maple nut roll, all in one bite.  It is very easy to just throw together and it will taste like you spent hours in the kitchen making this masterpiece.

Ingredients
  • 1 15 oz. can pumpkin puree (425 g baker's measure)
  • 1 12 oz. can evaporated milk (354 ml baker's measure)
  • 3 eggs (150 g baker's measure)
  • 1 tsp cinnamon (2.4 g baker's measure)
  • 1/2 tsp nutmeg (1.4 g baker's measure)
  • 1/2 tbsp ginger (1.4 g baker's measure)
  • 1/4 tsp clove (.5 g baker's measure)
  • 1 box yellow cake mix (432 g baker's measure)
  • 1 cup crushed nuts (117 g baker's measure)
  • 3/4 cup butter or margarine, melted (170 g baker's measure)
  • Maple Cinnamon Glaze
  • 2 cup powdered sugar (224 g baker's measure)
  • 1 tsp cinnamon (2.4 g baker's measure)
  • 2 tbsp soft butter or margarine (28 g baker's measure)
  • 2 tsp vanilla extract (8 ml baker's measure)
  • 1/2 cup pure maple syrup (170 ml baker's measure)
Instructions
  1. Preheat oven to 350*f. Spray an oblong 8x12 inch pan.
  2. Mix pumpkin puree, evaporated milk, the lightly beaten eggs, and spices all together in a bowl.
  3. Pour the mixture into the prepared pan.
  4. Sprinkle the box of cake mix evenly over the top of the pumpkin mixture to cover.
  5. Sprinkle the chopped nuts over the top of the cake mix evenly.
  6. Drizzle the melted butter over the top evenly to cover.
  7. Bake in a preheated 350*F oven for 45 minutes. Cool in the pan when done.
  8. While the dessert is baking, make the glaze.
  9. In a bowl mix the powder sugar, butter, vanilla, cinnamon, and maple syrup with a whisk until smooth and silky. Can add some milk or cream 1 tsp. at a time if too thick until desired texture is reached.
  10. Once the dessert has cooled place it on the plate and drizzle the glaze over before serving.
