Pumpkin Ice Cream Squares

I loved making this recipe, it was very simple. The outcome was delicious and not too sweet. If I were to make it again I would use pumpkin ice cream.

    Crust
  • 1.5 cup graham cracker crumbs (850g (baker's measurement) )
  • 1/4 cup sugar (50g (baker's measurement) )
  • 1/4 cup melted butter (56.7g (baker's measurement) )
  • Filling
  • 1/2 cup brown sugar (110g (baker's measurement) )
  • 1/2 tsp salt (3g (baker's measurement) )
  • 1 tsp cinnamon (2.64g (baker's measurement) )
  • 1/4 tsp ginger (.44g (baker's measurement) )
  • 1/8 tsp cloves (.27g (baker's measurement) )
  • 1 qt vanilla ice cream (286g (baker's measurement) )

  1. Mix together graham cracker crumbs, sugar, and melted butter. Press into a 9x9 pan

  5. Press into crust and freeze until solid
