Quick and Light Pie

Love Pie, but don't want to wait until the holiday's are here? Don't want to spend too much time preparing or baking pies in the summer? This pie is the quick to make and light for those sweltering dog days of summer. This no bake pie is sure to hit the spot in both time management and taste!

Ingredients
    Pie Crust
  • 50 g granulated sugar
  • 251 g graham cracker crumb
  • 77 g butter (melted) (heated in 15 second intervals until fully melted)
  • Pie Filling
  • 85 g Jello Mix (dry mix, not premade)
Instructions
    Pie Crust assembly
  1. Combine sugar, graham cracker crumbs and melted butter
  2. mix with fork until fully combined
  3. Place mixture in an 8 or 9 inch pie tin and press down until the bottom and sides are even and fully filled.
  4. Pie filling
  5. Boil the water
  6. Add Jello mix
  7. Mix until completely dissolved (about 2 to 3 minutes
  8. Add Ice cubes
  9. Stir continuously for about 2 to 3 minutes
  10. Remove any ice cubes that have not dissolved
  11. Place heavy whipping in stand mixer ( or use hand mixer) and whip until the cream is set (3-5 minutes)
  12. Add whipped cream into jello mixture
  13. Whip until mixture is smooth
  14. Fold in Fruit (if you are adding fruit)
  15. Chill if necessary ( if mixture is thin and looks "soupy" then chill for 10 to 15 minutes)
  16. Spoon Mixture into pie crust
  17. Chill at least 3 hours
