Quick Light Pineapple Pie

Ingredients
  • 1/4 cup sugar (50g)
  • 1 1/4 cup graham cracker crumbs (251g)
  • 6 tbsp melted butter (77g)
  • Pie Filling
  • 3 oz Jello mix (85g -- your choice of flavor)
  • 2/3 cup water (150)
  • 2 cup ice cubes (480g)
  • 1 cup heavy whipping cream (240g)
  • 8 3/4 oz crushed pineapple (235g)
Instructions
  1. Add sugar, graham cracker crumbles, and melted butter in a bowl
  2. Mix with fork until combined
  3. Dump into a 8 or 9 inch pie pan/tin and press the bottom and sides of the pan until evenly spread.
  4. Pie filling
  5. Completely dissolve gelatin in boiling water, stirring constantly for about 3 minutes
  6. Add the ice cubes and continue to stir until gelatin thickens (about 2 to 3 minutes)
  7. Remove any ice cubes that are not melted
  8. Add heavy whipping cream to stand mixer ( or use hand mixer) mix until cream sets (about 3 to 5 minutes)
  9. Add whipped cream to gelatin mixture
  10. Fold in fruit (if adding fruit)
  11. Chill the mixture if needed before putting into pie crust
  12. Spoon mixture into pie crust and chill for a minimum of 3 hours
