Rich and Creamy Maple Mousse
I really enjoy a rich and creamy mousse and this recipe delivers. This is a quick and easy recipe that you can throw together the same day or let it chill overnight. It is packed full of flavor and the chocolate gives you a nice crunch and pairs so well with the mousse. It's a sweet treat for those that don't like a lot of overpowering sweetness!

Ingredients

packet unflavored gelatin

Instructions

In a small bowl, sprinkle gelatin over the cold water. Let sit for 5 minutes.

Over a double boiler, beat the maple syrup and eggs. Cook for 10 minutes while stirring constantly. Add the gelatin and cook until dissolved.

Remove from heat. Cool over an ice bath until the mixture is cool but not yet set, stirring occasionally.

In stand mixer, whip the whipping cream until stiff peaks form. In 3 additions, gently fold the cream into the cool syrup mixture until smooth and blended well.

Pour into 3 8 oz ramekins or mold of choice. Cover with plastic wrap and refrigerate for 3 hours or until set. Garnish with semi sweet chocolate before serving.
