Roast Pork Loin

This is a very simple yet very flavorful dish. The tender and savory meat can be served casually with corn and mashed potatoes as a hearty dinner for the family or as the main course in an extravagant dinner. My family enjoyed this meal and didn't leave any leftovers!   *For best results, marinate over night.

Ingredients
  • 2.5-3 lb pork loin (You may also use lamb roast or beef.)
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 3 tbsp rice wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp rosemary (fresh, chopped or ground )
  • 1 tbsp garlic, sliced
  • 2-3 tbsp dijon mustard
Instructions
  1. In a bowl, add all the ingredients except the dijon mustard and stir to combine.
  2. Season the pork loin with salt and pepper. In a large enough baking dish or ziplock bag to hold the pork loin, pour the marinade over the loin. Marinate overnight.
  3. After marinating, preheat the oven at 350 degrees. Remove the pork from the marinade and place on a baking sheet.
  4. Coat the top and sides of the loin with the Dijon mustard.
  5. Bake the loin until the internal temperature reaches 140 degrees or your desired doneness. Remove from the oven and allow to rest for 10 to 15 minutes before slicing. Serve and enjoy!
