Rocky Road Cake

This recipe calls for a box of Pillsbury Devil's Food Cake Mix and then adding in the marshmallows, nuts, chocolate chips and raisins and frosting with Pillsbury Fudge Frosting then should you choose, decorating it with walnuts, chocolate chips, raisins, gummy worms, flies, and dead frogs (Halloween spooky). As I'm a baker I can't bring myself to use a boxed cake mix and canned frosting because I want to know what's in what I eat, and to me, fresh is always better, moister, creamier, etc. Below you'll find my Devil's Food Cake recipe you can find my Fudge Frosting on the site.

Ingredients
  • 375 g cake flour
  • 60 g cocoa
  • 8 g salt
  • 12 g baking powder
  • 8 g baking soda
  • 220 g shortening
  • 500 g sugar
  • 1 cup skim milk (250g baker's measure)
  • 1 tsp vanilla extract
  • 3/4 cup skim milk (188g baker's measure)
  • 250 g eggs
  • 1 1/2 cup walnuts
  • 1 1/2 cup chocolate chips (any type you prefer)
  • 2 cup mini marshmallows
  • 1 1/2 cup raisins (optional if you don't like them)
Instructions
  1. sift together the flour, cocoa, salt, baking powder, and baking soda into a mixing bowl. Add shortening and mix at medium speed for 2 minutes, stop, scrape down the sides and continue for another 2 minutes
  2. Add the sugar, vanilla extract, and 1 cup of milk and continue whipping for 3 minutes stopping every so often to scrape down the sides of the bowl.
  3. Gently whisk the eggs then add the other 3/4 cup milk to that. Pour this in slowly in 3 increments, being sure to scrape down the bowl before adding more. This should take about 5 minutes,
  4. Flour and grease 3 cake pans. Preferably using a scale, pour equal amounts of batter into these 3 pans.
  5. Bake time and temp varies depending on the size pan you are using. 6" - 375 degrees 18 min 8" - 375 degrees 25 min 10" - 360 degrees 35 min 9x9 - 360 degrees 30-35 min Cupcakes - 385 degrees 20 min
