Sicilian Orange Cake

I have a HUGE weakness for anything orange and every year on my birthday I make myself an orange cake. This is one of many that I do :)

If you use a bundt pan be sure to thoroughly grease and flour it so that the cake won't stick. You can use a bundt, an 8" springform or round cake pan for this.

Ingredients
  • 3 eggs
  • 1 1/8 cup sugar (250g baker's measure)
  • 1 3/4 cup cake flour (275g baker's measure)
  • 2 1/2 tsp baking powder (8g baker's measure)
  • 7 tbsp butter (softened) (100g baker's measure)
  • 1/3 cup plain Greek yogurt (100g baker's measure - I use whole milk yogurt)
  • 2 tsp orange or vanilla extract (4g)
  • 1 1/2 oranges (300g baker's measure)

  • 1 orange
  • 1/3 cup sugar ( baker's measure)
Instructions
  1. Preheat oven to 350 Beat sugar and eggs until light and fluffy
  2. Sift flour and baking powder then add to egg a little at a time, alternating with butter
  3. Grind up oranges entirely in a food processor, peel and all (remove seeds first if orange has any) Add this and chosen extract to the mix and mix until well combined
  4. Place in pan and bake for 50 minutes When done, pull from oven, and add glaze - allow to cool
  5. Glaze
  6. Add orange juice and sugar to pot, bring to a gentle boil and all to turn into a syrup
