Spicy Carrot Cake

Carrot cake is a wonderful blend of sweet and spice that works perfectly at the end of a meal or accompanied by a cup of hot tea or coffee.  This recipe is easy to make and easier to eat!

Ingredients
  • 1 1/4 cup flour (228g baker's measure)
  • 1 cup sugar (231g baker's measure)
  • 1 1/2 tsp baking powder (7 baker's measure)
  • 1 tsp salt (5g baker's measure)
  • 2 tsp cinnamon (10g baker's measure)
  • 3/4 cup oil (180g baker's measure)
  • 2 eggs
  • 2 tsp vanilla (10g baker's measure)
  • 2 cup carrots, loosely packed (180g baker's measure)
  • 1 cup chopped nuts (240g baker's measure)
  • 1/2 cup raisins (120g baker's measure)
Instructions
  1. Preheat oven to 325 degrees (163 Celcius)
  2. Line bottom of 9-inch (22.86cm) round pan with parchment.
  3. Add ingredients in order listed from flour to vanilla.
  4. Mix 1 minute on low speed. Do not overmix.
  5. Add in 2 cups carrots, grated and loosely packed. (You may add in chopped nuts and raisins at this time as well.)
  6. Bake at 325 degrees 40 - 45 minutes.
