Instructions

Preheat oven to 325 degrees (163 Celcius)

Line bottom of 9-inch (22.86cm) round pan with parchment.

Add ingredients in order listed from flour to vanilla.

Mix 1 minute on low speed. Do not overmix.

Add in 2 cups carrots, grated and loosely packed. (You may add in chopped nuts and raisins at this time as well.)

Bake at 325 degrees 40 - 45 minutes.
