Spinach Manicotti
My version of Spinach Manicotti. This dish is a quick, easy take on a classic, loved Italian dish. It's flavourful, bright, and meant to fill after a long hard day of work. Hope you enjoy it!

mozzarella cheese

parmesan cheese

1 jar
marinara Sauce
Instructions

Melt 4tbls butter in a small sauce pan

Mix in flour
-
Add broth bring to a small boil

Add half&half bring back to boil

Remove from heat
-
Pour half a cup into a casserole dish or cake pan save the rest of the mix for a bit

In pan melt rest of butter

Sautee onions and mushrooms
-
In same pan fry up sausage then remove from heat.

In a large bowl combine cottage cheese, tarragon, chopped spinach, eggs and mix well.

Then add meat, onion, mushroom, and marinara sauce and mix

With the sauces baking pan single layer the noodles

Top with the rest of the white sauce

Layer on the meat mixture

Cover with tinfoil

Bake 45mins

Mix parmesan and mozzarella cheese together and set aside

Remove baking dish from oven

Top bake with cheese mix

Uncovered return dish to over 10-15 more mins

Remove from oven
