Spinach Manicotti

My version of Spinach Manicotti. This dish is a quick, easy take on a classic, loved Italian dish. It's flavourful, bright, and meant to fill after a long hard day of work. Hope you enjoy it!

Ingredients
  • 3 3/4 oz terracotta
  • 1 cup cottage or ricotta cheese
  • 1 lb sausage
  • 10 oz chopped spinach
  • 1/4 lb minced mushrooms
  • 1 medium onion
  • 6 tbsp butter or margarine
  • 1/4 cup flour
  • 10.5 floz chicken broth
  • 1 cup half & half
  • 1/4 tsp tarragon
  • 2 eggs
  • 6 oz mozzarella cheese
  • 1 cup parmesan cheese
  • 1 jar marinara Sauce
Instructions
  1. Melt 4tbls butter in a small sauce pan
  2. Mix in flour
  3. Add broth bring to a small boil
  4. Add half&half bring back to boil
  5. Remove from heat
  6. Pour half a cup into a casserole dish or cake pan save the rest of the mix for a bit
  7. In pan melt rest of butter
  8. Sautee onions and mushrooms
  9. In same pan fry up sausage then remove from heat.
  10. In a large bowl combine cottage cheese, tarragon, chopped spinach, eggs and mix well.
  11. Then add meat, onion, mushroom, and marinara sauce and mix
  12. With the sauces baking pan single layer the noodles
  13. Top with the rest of the white sauce
  14. Layer on the meat mixture
  15. Cover with tinfoil
  16. Bake 45mins
  17. Mix parmesan and mozzarella cheese together and set aside
  18. Remove baking dish from oven
  19. Top bake with cheese mix
  20. Uncovered return dish to over 10-15 more mins
  21. Remove from oven
  22. Dinner is served
