Stout Beer Muffins

Use this simple muffin recipe to serve alongside a meal for any occasion. You basically have everything in the pantry! Include anything you wish alongside your choice of beer. A subtle but delectable treat for dinner or for dessert.

Ingredients
  • 2 cup all purpose flour (280 g bakers measure)
  • 3 tsp baking powder
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 1 tbsp sugar (15 g bakers measure)
  • 12 floz stout beer
Instructions
  1. Heat oven to 400F. Grease the bottom of 12 medium muffin cups or use paper cups instead.
  2. Put all dry ingredients together and mix to combine.
  3. Add oil and beer and begin to beat vigorously until flour is hydrated and mixed in. If dough becomes thick and sticky, add more beer or water to lighten it up a bit. It shouldn't keep its shape if placed in the cup, it should begin to drop like a liquid but not too liquidy. Fill 2/3 full then bake for 15 minutes or until golden brown. Serve!
Recipe Notes

I used a New Mexico local beer called Milk Mustachio Stout made by Tractor Brewing Co. It gave my muffins a slight cocoa taste and was perfect with my chicken dinner! Also added some chocolate chips to some and turned it into a sweet quick treat. I recommend checking your local companies for beers to use!
