Strawberry-Banana Bread

Living in FL we have an amazing growing season because the sun is usually shining. Beginning of March while much of the rest of the nation is still freezing, we're rolling out the Strawberry Festival in Plant City which is attended by people from around the world. You can find more information on that here With an abundance of strawberries at my fingertips, I am always finding fun ways to play with them. Here I decided to take an old favorite, banana bread and sweeten it up. Strawberry Banana is all the rage so why not mix them in a bread. Keep in mind, this recipe can be used with whatever berries you'd like. Blackberry, raspberry, blueberry any of them will work in this. Mix them up and play with it.

Ingredients
  • 1/2 cup unsalted butter (110g baker's measure)
  • 1 cup sugar (175g baker's measure)
  • 2 eggs (108g baker's measure)
  • 4 medium bananas (mushed up)
  • 2 cup all-purpose flour (fill cup by loosely spooning in, do not pack (266g baker's measure))
  • 1 tsp baking soda (6g baker's measure)
  • 1/2 tsp salt (3g baker's measure)
  • 1 tsp cinnamon (2g baker's measure)
  • 1/2 tsp nutmeg (1g baker's measure)
  • 1 1/2 cup berries tossed with a Tbsp of flour (if using strawberries, chop them small -)
Instructions
  1. Preheat oven to 375, grease and flour 2 9x5 loaf pans
  2. Sift dry ingredients together and set aside
  3. Cream butter and sugar together using a hand or stand mixer until very light and fluffy
  4. Add eggs one at a time and continue mixing until well combined
  5. Add bananas and mix gently until combined
  6. Add dry ingredient mixture slowly until just combined, don't overmix
  7. Fold in berries
  8. 375 for 15, turn down to 350 and bake for 30 more
