Strawberry Rhubarb Yogurt Mousse Bars

This was a lot of fun and you can easily use any type of yogurt that you like. It was a big hit with the family and is a perfect dessert. Yes, it does take time in the freezer to set up but so worth the wait I promise.

Ingredients
  • 2 cup heavy cream (477g bakers measure)
  • 2 egg whites (63g bakers measure)
  • 4 tbsp sugar (40g bakers measure)
  • 1 tsp vanilla bean paste (3g bakers measure)
  • 16 oz strawberry rhubarb yogurt (437g bakers measure)
  • 25 crushed oreo cookies (approximately) (354g bakers measure)
  • 1 stick unsalted butter (109g bakers measure)
  • 1/3 cup sugar (82g bakers measure)
Instructions
  1. Combine heavy cream, egg whites, sugar, and vanilla bean paste in a large mixing bowl. Beat until stiff.
  2. Fold in the yogurt
  3. Mix butter, cookie crumbs, and sugar into a bowl
  4. Put cookie mixture into bottom of the pan
  5. Pour in yogurt mousse over top of cookie crust spread out and place fresh strawberries and then place in freezer for up to 12 hours for it to set.
