Strawberry Rhubarb Yogurt Mousse Bars
This was a lot of fun and you can easily use any type of yogurt that you like. It was a big hit with the family and is a perfect dessert. Yes, it does take time in the freezer to set up but so worth the wait I promise.

Instructions

Combine heavy cream, egg whites, sugar, and vanilla bean paste in a large mixing bowl. Beat until stiff.

Fold in the yogurt

Mix butter, cookie crumbs, and sugar into a bowl

Put cookie mixture into bottom of the pan

Pour in yogurt mousse over top of cookie crust spread out and place fresh strawberries and then place in freezer for up to 12 hours for it to set.
