Stuffed Breast of Veal (chicken breast)

I couldn't find veal breast. So I substituted it for chicken breast.  It turned out delicious. I sprinkled cheese on top for flavor.

Ingredients
  • 4 lb chicken breast
  • 2 lb ground veal
  • 1 cup bread crumbs
  • 1/2 cup onions (finely chopped)
  • 1/4 tsp garlic (finely chopped)
  • 1/2 tsp thyme
  • 1/4 cup parsley
  • 3 eggs
  • 1 tsp salt
  • 1/4 cup heavy cream
  • 1/4 tsp pepper
  • 1/2 cup cheese (sprinkle over top optional)
Instructions
  1. Preheat oven to 325
  2. Carefully slice a pocket into each breast
  3. Mix all ingredients
  4. Stuff pockets
  5. Tie securely and brush with butter. Bake 45 min to an hour, gently pricking the breasts 1/2 way through to help them self baste
  6. Sprinkle cheese over top turn to broil until lightly brown
