Stuffed Pork Roast

I love stuffing chicken breasts, roasts, most anything. Not only does it add a layer of flavor but it looks really pretty on a plate. Here spinach, onion, eggs, ricotta cheese and, Italian sausage come together to make simple pork roasts truly divine.

Ingredients
  • 3 lb pork shoulder roast
  • 1 frozen spinach package
  • 1/2 cup ricotta (cottage cheese could be used here as well)
  • 3/4 cup Italian sausage (https://mymomsrecipebook.com/recipes/italian-sausage/)
  • 2 hard boiled eggs (chopped)
  • 1 onion (diced)
Instructions
  1. defrost spinach, and using a strainer and paper towels, push all the water out of it til it's as dry as you can possible get it
  2. slit side of pork roast until it's butterflied open, don't slice all the way through it
  3. on one side of the roast layer the spinach, ricotta, sausage, eggs, and then the onion
  4. fold the other side oven then tie the roast with twine
  5. bake uncovered without a roasting rack at 350 for 1 1/2 hrs. Allow to rest 10min before slic
