Sweet and Spicy Caribbean Slaw

Add some flair to this American classic with a hint of spice and some tropical fruit. This is a very simple recipe with amazing flavors!  Pairs well with any grilled protein or served on top of a burger or hot dog.  Give it a try.  It will change the way you think about coleslaw!

Ingredients
    Slaw
  • 5 cup red cabbage (shredded and chopped into 1 inch pieces)
  • 1-2 (depending on size) broccoli stalks (peeled, julienned and cut to 1")
  • 1 1/2 medium carrots (peeled, julienned and cut to 1")
  • 1 red, yellow or orange bell pepper (julienned and cut to 1")
  • 1/2 red onion (sliced thin and cut in half)
  • 1 jalapeno (seeded, deveined and minced)
  • 1 avocado (firm but not hard) (diced)
  • 2 mango (diced)
  • Dressing
  • 1/2 cup lime juice (fresh squeezed)
  • 1 lime (zest)
  • 2 tbsp sugar
  • 1 tsp fish sauce
  • tsp sesame oil
  • 3 cloves garlic (minced)
  • tsp sriracha (add more to taste)
  • 1/2 tsp salt (add more to taste)
  • Garnish
  • tbsp sesame seeds, black, white or both
Instructions
    Slaw
  1. Combine all ingredients except avocado and mango and mix
  2. Gently fold in avocado and mango to avoid mashing
  3. Dressing
  4. Combine lime juice and sugar until sugar dissolves
  5. Whisk in the rest of the ingredients until well combined
  6. Combine
  7. Add dressing to slaw and gently fold until well coated
  8. Serve
  9. Serve and garnish with sesame seeds Enjoy!
