Vanilla Semifreddo (Ice Cream)

With this get creative, add extracts, spices, fruit, melted chocolate. This is a base!! Where you take it is all your own. In the photo I added 2 tablespoons of cinnamon to get with my apple crisp.

Ingredients
  • 2 1/4 cup heavy cream
  • 1 cup sugar
  • 3 eggs
  • 2 egg yolks
  • 1 tsp vanilla
Instructions
  1. Whip the heavy cream to soft peaks
  2. Place everything else except vanilla in a pot over medium heat. Using a hand mixer (or a whisk if you're down for your arm falling off lol), mix this until the eggs are extremely pale in color and have thickened. When you lift the beaters out of the put a thick ribbon should fall.
  3. Add vanilla (ONLY IF THAT'S WHAT YOU WANT). At this point this is where you get creative, add whatever extract you want, add spices like cinnamon, add vanilla extract and fruit, add strawberry extract and strawberries, get creative and play with this time and time again.
  4. Fold this into your heavy cream, place it in a deep enough casserole that'll hold it and fit in your freezer. I use a 1/4 hotel pan. Place plastic wrap on top, actually touching it to keep the top smooth.
  5. Freeze a minimum of 6 hours
