Walnut Applesauce Cupcakes

Who loves applesauce? I love applesauce! This simple yet hearty recipe will appeal to the applesauce-loving kid in all of us! I normally don't change recipes but for this one I added brown sugar instead of white to give it small but healthier touch. Be careful not to overmix and dry the batter out.  If you are like me you may be tempted to fill the liners to make more full cupcakes but trust me you won't need to. The rise on these is perfect.  I enjoyed the smell of these as they baked! Smells like the holidays in your oven. I would definitely recommend these for holiday parties or meals. I made a cream cheese applesauce frosting to top these and let me tell you about slap yo mama good. The perfect treat for the most wonderful time of the year!

Ingredients
  • cup walnuts (117g)
  • 1/2 cup shortening (125g)
  • 11/2 cup sugar (200g)
  • 2 eggs (114g)
  • 2 1/4 cup ap flour (281g)
  • 1 tbsp ground cocoa (7g)
  • 1 1/2 tsp baking soda (1g)
  • 1 tsp salt (5g)
  • 1/2 tsp cinnamon (1g)
  • 1/4 tsp nutmeg (1g)
  • 1 1/4 cup applesauce (264g)
Instructions
  1. Cream shortening and sugar
  2. Beat in eggs one and a time until light and fluffy
  3. Sift dry ingredients and sift again. blend into creamed mixture alternately with applesauce. stir in walnuts
  4. Spoon into prepared baking cups 2/3 the way full
  5. Bake at 350 for 30 mins, cool top with a swirl of frosting and a walnut half
