Watermelon Sorbet

This cool and refreshing watermelon sorbet is the perfect summer time treat for the whole family! And the best part is...you don't even need an ice cream maker! It's super easy to make and only needs a few simple ingredients! Enjoy!

Ingredients
  • 4 cup watermelon juice (45 oz baker's measure)
  • 1 lemon, juiced
  • 1 1/2 cup water (375ml baker's measure)
  • 1 cup sugar (220g baker's measure)
  • 1 egg white
Instructions
  1. Juice watermelon and lemon in a juicer, food processor, or blender and strain.
  2. Combine water and sugar in a saucepan. Bring to a boil on medium-high heat, keep stirring until sugar has dissolved. Reduce to medium heat and allow to simmer for five minutes. Remove from heat and let cool, then mix with watermelon juice.
  3. Place mixture in a freezer safe container. A loaf pan or glass bowl will work! Freeze for 1 hour and mix. Re-freeze for another hour and mix again.
  4. Whisk one egg white until soft peaks form and fold it into the semi-frozen mixture.
  5. Pour mixture into an ice cream container or lamington pan. Freeze overnight. Serve alone or with fresh fruit! Enjoy!
