Zucchini Bread

I remember when my husband was stationed in Hawaii years ago, my neighbor and her husband use to make zucchini bread. I remember how amazing it would smell as it was baking. They would always bring some over, and it was really good. I have said for years that I would bake my own, but I never have until now. I always thought it  would be difficult to make but it wasn't. It was actually very easy. This recipe is very easy to follow and it makes very good zucchini bread. The recipe makes 2 loaf pans, I love miniature loaf pans so I used those to bake my bread in. They turned out really well. So whatever pan you choose bake some up and enjoy!!!

It also freezes well if you don't have use for 2 loaves right now.

Ingredients
  • 2 cup zucchini (350g)
  • 3 eggs (150g)
  • 3 cup flour (408g)
  • 1 tsp baking soda (4.80g)
  • 1 tbsp vinegar (21.25g)
  • cup oil (240g)
  • 2 cup sugar (402g)
  • 1 tsp salt (5.69)
  • 1 tsp baking powder (4g)
  • 3 tsp cinnamon (7.92)
  • cup chopped nuts (109g)
  • cup raisins (159g)
Instructions
  1. Preheat oven to 350
  2. Beat eggs until light.
  3. Add oil and sugar, beat well.
  4. Add remaining ingredients. Mix well.
  5. Bake in 2 greased bread pans for 1 hour or until a toothpick comes out clean or with a few crumbs.
