Bombastic Bean Dip

Yes, it's that good. I'm also sharing a version of my guacamole recipe, for those that understand the addiction. (NOT sorry, just so you know.) This is a dip, yes...but no one is looking right now... Easiest thing in the world to make, and it takes no time at all. Blah-blah-blah, let's do this!!!

Ingredients
    Guacamole
  • 4 ripe avocados (pitted and mashed)
  • 1/2 white onion (small diced)
  • 2 medium tomato (diced, separated )
  • 1/4 cup cilantro (chopped)
  • 1 lime (all the juice)
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 3/4 tsp cumin
  • Bean Dip, part 1
  • 16 oz can of beans (can sub vegetarian refried beans)
  • 1/2 onion (chopped)
  • 4 oz can of diced green chiles (rotel works here, if chiles aren't available)
  • tabasco (to taste)
  • chili powder (to taste)
  • Bean Dip, part 2
  • grated cheddar cheese (your discretion)
  • 8 oz cream cheese (room temp mixes better)
  • 8 oz sour cream
  • guacamole (your discretion)
  • sliced olives (green or black)
Instructions
    Guacamole
  1. Mix well, then taste and adjust the seasoning balance.
  2. Place in container, smooth the top, the pat down a bit of plastic wrap across the top until you're ready to use it, and pop it in the fridge.
  3. Bean Dip
  4. Spread beans in the bottom of your pan.
  5. Add the onion, chiles, and seasonings to the beans, mixing well.
  6. Spread evenly across the bottom of your dish.
  7. Mix sour cream and cream cheese together, blending well. Spread on top of beans.
  8. Spread the guacamole next.
  9. Sprinkle the shredded cheddar over the top of the guacamole.
  10. Garnish with olives and the second portion of the diced tomatoes.
  11. Feed your tribe!!!
