Rigatoni

This was a concoction that Mom came up when she realized we were out of spaghetti sauce. It’s a little Italian Mexican fusion

Green Enchiladas

This is my absolute favorite type of enchilada!!! I have found in my moves around the U.S. that tomatillos (7 states) entero can be difficult to find so I’ve given you the option of how to use fresh tomatillos. Here they are pictured with my Jazzed Up Refried Beans

Jazzed Up Refried Beans

Refried beans out of a can look and smell pretty gross, and while we know they’re going to taste good they can totally taste better 🙂 Here’s a quick way to jazz them up a little bit. The ones here are pictured with my green enchiladas

Margarita Pie

I have taken this to countless potlucks and parties over the years, it’s always a hit and there’s almost never any to take home with me. I’ve also used it for Superbowl parties. On occasion, I’d scale it WAY back and have it for my kids as an afterschool snack that’d last em a couple of days.

Taco Meat

Who doesn’t love tacos !!! This meat is super good and whenever I make tacos everyone mows down SOOOO many LOL

Mexican Lasagna

This was something my Nana came up with. It’s different but really tasty. My Nana put Pace© Picante Sauce on almost everything. As a kid, I nicknamed her hot sauce Hazel 🙂

Homemade Flour Tortillas

I think you will enjoy this quick and simple recipe! Homemade tortillas are so tender and chewy, you’ll never want the store bought ones again after making your own! All you’ll need are five ingredients to make these delicious tortillas. You can always double the recipe to make more at one time, trust me you will go through these very quickly! Enjoy!

Chili From Mexico

I haven’t a clue where this monstrosity came from. It’s typed out on what was obviously a typewriter so it’s definitely old. I will admit this is one of the ones in the books that I looked at with my head tilted and was scared to death to make but I am determined to add everything from the book to this website, scary or not so I made it. Thankfully it wasn’t as horrible as I feared it would be but gawd dog is it a hot mess to look at. If you have the gumption to make it, your …

Pizza Mexicana

Pizza is something that everyone loves to enjoy from time to time.  This recipe is one of the best pizza recipes that I have ever made.  The pizza dough can be intimidating to make, but this recipe makes it simple and it has an amazing taste to it.  We love thin crust pizza so that is what I made.  You can make this as spicy as you want or as mild as you want.  There are endless possibilities when you are adding toppings as well. So get creative and get the kids involved in making this fun dish.

Mexican Meatballs

I really enjoyed this recipe as it allowed me to explore other ingredients using meatballs.  Traditionally, I have only used them for a typical Italian dish, so this recipe definitely takes me a little out of my comfort zone.  Nevertheless, a wonderful surprise.

Schnitzel Tacos

This recipe is a twist off of a Milanese veal steak. I switched to a more classic Schnitzel using pork chops but veal steak will also work making them Wiener Schnitzel Tacos.  Did you know Wiener Schnitzel has been dated all the way back to the 19th century and originates from Austria but was made famous in German cuisine. All of the best German flavors are here with the traditional roasted potatoes and lemon cream sauce with the well known red cabbage slaw to top it all off.

Pozole

Now, this was a different take on a very classic recipe, and the sauce for them even with its heat makes an amazing meat marinade. This dish certainly has a feeling for every taste bud you can recognize. I took it just a step farther and made a one-pot dish very easily with this super easy recipe even on the hottest of days you can cook this dish knowing the only heat you need to worry about is the spice heat in the sauce. It’s too hot in my house this time of year (late summer) I had to figure …

Bombastic Bean Dip

Yes, it’s that good. I’m also sharing a version of my guacamole recipe, for those that understand the addiction. (NOT sorry, just so you know.) This is a dip, yes…but no one is looking right now… Easiest thing in the world to make, and it takes no time at all. Blah-blah-blah, let’s do this!!!

Tamales

Being from California, Mexican food is a staple of our diet LOL. I learned how to make Tamales early on and every so often I get down on Christmas, gather everyone around, and have a Tamalada. I also make these from time to time during the year. While these may seem spicy by reading the ingredients, they’re not that bad after they cook down, the masa is added and they’re ready to eat. You can also remove the seeds from the dried peppers which will bring the spicy heat to near zero. The peppers used in this are all very …
