Ingredients
    Dry Ingredients
  • 6 cup flour (838g baker's measure)
  • 1 tbsp salt (18g baker's measure)
  • 2 tsp baking powder (9.2g baker's measure)
  • Wet Ingredients
  • 1-2 cup water
  • 2/3 cup shortening (140g baker's measure)
Instructions
  1. Mix dry ingredients with a whisk making sure everything is evenly distributed.
  2. Cut in shortening or lard. If neither are available you can also use olive oil or vegetable oil. Mix fat with dry ingredients until it looks like the consistency of sand.
  3. Add water or buttermilk and mix until you have a soft and elastic dough. Add oil as needed to keep the dough from drying out.
  4. Divide dough into golf size balls, cover and set aside for 20 mins. Preheat cast iron pan or skillet to low-medium heat.
  5. Using a rolling pin, roll dough balls out flat and to your desired thickness. Place tortilla in pan and cook for 2-3 mins on each side. Do not use oil when cooking!
  6. You will know tortillas are done cooking when they are light golden brown on each side. Place on a plate and cover with a towel to keep them warm and soft.
