Homemade Hot Cocoa

Hot cocoa is something that is so comforting on cold mornings.  I have always loved hot cocoa or hot chocolate. I was always taught to call it hot chocolate.  I can remember as a young girl my grandmother Olene would make this for all of us on cold mornings before school.  It was such a welcoming treat before heading off to catch the bus for school.  I made this a different way than what my grandmother made it.  I hope you enjoy this recipe.

Ingredients
  • 1/4 cup sugar (white sugar) (can substitute for with a sugar substitute for diabetics)
  • 1/2 cup water
  • 1/2 tsp vanilla extract
  • 1/2 tsp espresso powder (can leave out, but it enhances the chocolate flavor)
  • 3 1/2 cup milk (can use almond milk or soy milk for lactose intolerant and vegans.)
  • 1/8 cup mini marshmallows (I used two large marshmallows. I was out of the mini ones.)
  • 1 cup semisweet chocolate chips (can use dark chocolate, or white chocolate)
Instructions
  1. In a large pot add the sugar and gradually add the water. Then bring this mixture to a boil and boil for 1 minute.
  2. Reduce the heat to low and add the milk, vanilla, and espresso powder. Stir to just combine these ingredients to the sugar water.
  3. Add your chocolate chips. Stir until the chocolate chips are melted.
  4. Serve in a cup or glass and garnish with marshmallows and whip cream. Serve hot and enjoy.

Hot Coco is something that is wonderful on a cold day.  You can even make an adult version with some rum in it.  It would be amazing.  This morning I made it before my husband had to go to work and we just kept it traditional.  The hot coco's chocolate flavor was enhanced with just a little bit of espresso powder.  It was amazing and brought back many memories.  Hope you will give this a try.  Simple to make and doesn't take a lot of ingredients and is really budget friendly too.
