Kashmiri Rice

This dish was absolutely delicious. I am not a huge fan of many rice dishes, but this recipe is easy and definitely worth a try.

Ingredients
    Kashmiri Rice
  • 3 tbsp butter (to cook onions)
  • cup onion (or 1 small onion)
  • tbsp garlic (optional)
  • 2 1/2 cup chicken stock or broth
  • 2 tbsp lemon zest
  • bay leaf (decent size)
  • 1/2 tsp saffron
  • tbsp lemon pepper (optional)
  • tbsp salt (to taste)
  • 2 tbsp butter
Instructions
  1. Melt butter in a pot and add onions.
  2. Cook till soft and see-through, then add garlic rice and seasonings cook for a minute or so then add broth or stock.
  3. Bring to a boil then reduce heat to a simmer and cover.
  4. Simmer covered for about 10 minutes stirring bottom so it doesn't stick. Once the liquid is gone and rice is soft remove from heat add butter and fluff rice. Keep covered till ready to serve.

extremely easy and quick to make has got to be one of the easiest meals to make when you have to multi task you to do list. I will keep this dish in my own book and make many more times to come.
