Mary’s Rice 2

I found this rice dish relatively easy to make, delicious, and can go with almost any meal. You can also make all four of Mary's rice dishes for a family get-together, so everyone can try something new and exciting. Along with this, there is Mary's Risotto Mary's Cabbage & Rice Mary's Creamy Rice

Ingredients
  • 1 cup rice
  • 2 tbsp butter (divided)
  • 1/2 cup onion (diced)
  • 1/2 cup bell pepper (diced (I used yellow and orange for color but you can use what you like))
  • 1 tsp garlic powder (or to taste)
  • 1 tsp parsley
  • 1/2 tsp oregano (or to taste)
  • 1/4 tsp tyme
  • 1 cup water
  • 1 cup tomato juice
  • 1/2 cup parmesan cheese (greated)
Instructions
  1. In a small bowl combine water, tomato juice, parsley, oregano, tyme, and garlic powder together
  2. In a medium saucepan melt 1 tbsp of butter, add onion and bell peppers, saute till onion is translucent
  3. Add next tbsp of butter and melt
  4. Add rice and saute for 2 minutes
  5. Slowly add water mixture till sizzling stops
  6. Add rest of liquid and bring to full boil
  7. Sprinkle parmesan cheese on top
  8. Reduce heat to simmer
  9. Cover and simmer for 18 minutes. Serve and enjoy
