A very easy and tasty risotto dish for something a little bit different instead of plain white rice. Using the broth of your choice can easily make this a vegetarian dish and using vegan options for butter and cheese it can be vegan. Risotto really is a dish for everyone.

  • In a medium skillet with high edges melt 1 tbsp of butter, add onion and saute till translucent
  • Add next tbsp of butter and melt
  • Add rice and toast for 2-4 minutes
  • Add half a cup of broth at a time to rice stirring. When rice absorbs the broth add the next half cup
  • Continue till rice is tender
  • Stir in parmesan cheese, salt, and pepper. Serve and enjoy
