Mary’s Rice

A unique recipe that is exciting yet a bit challenging to make, but in the end, it came out with great flavors.

Ingredients
  • 4 tbsp butter (any will do )
  • onion (whole onion medium diced)
  • 1 cup rice (white rice is encourage)
  • 1 tomato (seeded and diced)
  • 1/4 cup currants (raisins will work)
  • 1 lb pork (use meat of your choosing )
  • 1 tsp salt (any can be used)
  • 1/2 tsp pepper (ground pepper)
  • 2 cup beef stock (use stock or broth of your choosing )
  • 1/4 cup nuts (optional)
Instructions
  1. Cook the onions with butter and meat. Cook until tender and onions are translucent. Heat on medium-high, stirring occasionally so the onions do not stick to the pot and the meat cooks evenly.
  2. Add the rice in the pot constantly stirring for five minutes. Still on medium heat. Do not let the rice stick to the bottom it will burn.
  3. Add the rest of the ingredients. Nuts are optional. Let is simmer for 20-30 minutes.
  4. The product will be finished by how well the rice is cooked. If it is still hard it needs more time. Once everything is cooled down serve.
