Mary’s Risotto

A very easy and tasty risotto dish for something a little bit different instead of plain white rice. Using the broth of your choice can easily make this a vegetarian dish and using vegan options for butter and cheese it can be vegan. Risotto really is a dish for everyone. Ingredients
  • 1 cup rice
  • 2 tbsp butter (divided)
  • 1/2 cup onion (diced small)
  • 3 cup chicken broth (can substitute with beef or vegetable, may not use all 3 cups)
  • 1/4 cup parmesan
Instructions
  1. In a medium skillet with high edges melt 1 tbsp of butter, add onion and saute till translucent
  2. Add next tbsp of butter and melt
  3. Add rice and toast for 2-4 minutes
  4. Add half a cup of broth at a time to rice stirring. When rice absorbs the broth add the next half cup
  5. Continue till rice is tender
  6. Stir in parmesan cheese, salt, and pepper. Serve and enjoy
