A very easy and tasty risotto dish for something a little bit different instead of plain white rice. Using the broth of your choice can easily make this a vegetarian dish and using vegan options for butter and cheese it can be vegan. Risotto really is a dish for everyone.

Ingredients

rice

tbsp
butter
(divided)

1/2
cup
onion
(diced small)

cup
chicken broth
(can substitute with beef or vegetable, may not use all 3 cups)

1/4
cup
parmesan
Instructions
-
In a medium skillet with high edges melt 1 tbsp of butter, add onion and saute till translucent

Add next tbsp of butter and melt

Add rice and toast for 2-4 minutes

Add half a cup of broth at a time to rice stirring. When rice absorbs the broth add the next half cup

Continue till rice is tender

Stir in parmesan cheese, salt, and pepper. Serve and enjoy
