Mexican Lasagna

This was something my Nana came up with. It's different but really tasty. My Nana put PaceĀ© Picante Sauce on almost everything. As a kid, I nicknamed her hot sauce Hazel :)

Ingredients
  • 1 lasagna (box)
  • 1 lb hamburger
  • 1 yellow onion (diced)
  • 1 bell pepper (diced)
  • 15 oz tomato sauce
  • 16 oz picante sauce
  • 16 oz cream cheese
  • 16 oz cottage cheese
  • 16 oz sour cream
  • 1/2 cup cheddar cheese
  • 1/2 cup parmesan cheese
Instructions
  1. Cook lasagna according to package, rinse with cold water so easy to handle, set aside.
  2. In a bowl, mix together cream cheese, sour cream and cottage cheese, set aside
  3. In a large frying pan, fry hamburger along with onion and bell pepper over medium-high heat until hamburger is cooked through and veggies are softened.
  4. Drain grease then stir in tomato sauce and picante sauce
  5. In a 9"x13" baking dish lay a thin layer of hamburger, top with a layer of lasagna noodles then cheese mix. Continue this hamburger, lasagna, cheese layer until filled, being sure to end with a hamburger layer.
  6. Top with cheddar and parmesan.
  7. Bake at 350 for 45 min. Allow to rest about 10min before slicing.
