Pizza Mexicana

Pizza is something that everyone loves to enjoy from time to time.  This recipe is one of the best pizza recipes that I have ever made.  The pizza dough can be intimidating to make, but this recipe makes it simple and it has an amazing taste to it.  We love thin crust pizza so that is what I made.  You can make this as spicy as you want or as mild as you want.  There are endless possibilities when you are adding toppings as well. So get creative and get the kids involved in making this fun dish.

Ingredients
    Pizza Dough
  • 1 tsp dry yeast (you can use the instant yeast )
  • 1/3 cup water
  • 1 tsp sugar
  • 2 tbsp rye flour
  • 3/8 cup wheat flour
  • 3/4 cup all purpose flour
  • 1/2 tsp salt (i used kosher salt, but feel free to use sea salt or table salt.)
  • 1/6 cup milk (use whole, skim, or 2 % milk, which ever you have on hand)
  • 2 tsp olive oil (use either vegetable, canola, or what ever oil you have on hand.)
  • 1/2 cup all purpose flour (this is for kneading of dough, it might take less.)
  • Spicy Enchilada Sauce
  • 1 tbsp olive oil (you can use any kind of oil you have on hand)
  • 2 cloves of garlic minced (you can buy the already minced garlic at the store)
  • 2 1/2 tsp chili powder (any brand you have on hand)
  • 1 tsp dried oregano (you can use fresh or Mexican oregano if you have it)
  • 1/2 tsp dried basil (can use fresh basil minced up finely)
  • 1/8 tsp salt (use sea salt or table salt)
  • 1/4 tsp ground cumin
  • 6 oz tomato sauce (you can use any brand you have on hand.)
  • 1 1/2 cup water
  • 1/2 tsp chipotle in adobo (you can either buy it already minced or mince 1/2 tsp of the pepper and adobo sauce. Can add more depending on how spicy you want it.)
  • 1/4 cup medium salsa (you can use a spicier salsa or milder. you can also make your own salasa.)
  • Toppings
  • 1 cup Mexican Crema (can use either sour cream.)
  • 1/4 cup spicy enchilada sauce (can use ketchup with hot sauce as an alternative)
  • 3/4 cup muenster cheese (you can use any kind of cheese you would like. get creative.)
  • 3/4 cup cheddar cheese (you can use sharp cheddar or mild cheddar)
  • 1/2 cup jack cheese
  • 1/2 cup gouda cheese (i used the one in bourbon, you can use any variety of gouda cheese)
  • 6 oz queso fresco cheese (you can substitute goat cheese for this cheese)
  • 1/2 cup pepper jack cheese
  • 1 bell pepper (sliced thinly. you can use what ever color of bell pepper you have on hand.)
  • 1 red onion (thinly sliced, if you don't have red onions, use which ever color you have on hand.)
  • 6 oz black olives (i divided the 6 oz of black olives between 2 pizzas)
  • 1 tbsp olive oil (you can use any oil you have on hand)
  • 18 oz ground chorizo sausage (you can use the vegan version of this sausage as well.)
  • 2 ripe tomatoes (thinly sliced, you can use roma tomatoes or slicing tomatoes)
  • 2 tsp fresh marjoram (can use the dried marjoram as well)
  • 2 tsp fresh cilantro (you can use the dried cilantro as well)
  • 1 oz grated parmesan cheese
  • 1 tsp olive oil (you can use any kind of oil you have on hand)
  • 3 jalapeno peppers (sliced thinly, you can use the canned jalapeno peppers if you want. I removed the seeds and the white membrane in the peppers so I can control the spicyness.)
Instructions
    Pizza Dough
  1. Dissolve yeast into warm water, no hotter than 110 degrees with the sugar. Set aside and let set in a warm area for about 10 minutes. The yeast will begin to bubble.
  2. Combine the flours, and salt into a mixing bowl and mix to combine. Next add the yeast mixture, add milk, and olive oil and mix these things together until combined.
  3. Mix your wet ingredients into the dry ingredients. This will form a rough dough.
  4. Turn the dough out on to a floured surface and knead until the dough is smooth. Continue to add flour as necessary to keep dough from sticking to the surface you are kneading on.
  5. Put the dough in a bowl that has olive oil in it and coat both sides of the dough in the olive oil. Cover with plastic wrap or a clean dry towel.
  6. Let the dough rise for 30 minutes or until doubled in size.
  7. Turn the dough back out onto a floured surface and cut the dough in half.
  8. Roll out each piece of dough into a circle that is 8 inches in diameter.
  9. Place dough on pizza pan to prepare to build your pizza.
  10. Spicy Enchilada Sauce
  11. Heat oil in a sauce pan over medium heat.
  12. Add the garlic and cook for 1-2 minutes.
  13. Next add the oregano, chili powder, basil, ground black pepper, salt, cumin, salsa, tomato sauce, and the chipotle in adobo.
  14. Mix all the ingredients together until combined well. Bring it to a boil, then reduce to a simmer and simmer for 20 to 25 minutes. Remove from heat and set a side to place on pizza crust.
  15. Pizza toppings
  16. Spread the spicy enchilada sauce over the crust of the pizza. It will take approximately 1/4 cup of the sauce. You can use more if you would like.
  17. Sprinkle with all the cheeses listed above. Do it in any order that you wish to do it in. I put the queso fresco cheese right after the second layer of the cheeses.
  18. Arrange the onions, bell peppers, jalapeno peppers, tomatoes, and black olives in any order you wish to have them in.
  19. Add the cooked chorizo sausage to the pizzas next.
  20. Place into a 400 degree oven and bake for 15 to 20 minutes. The crust should be golden brown and delicious. The crust should also be crispy.
  21. Remove from the oven, slice the pizza, and place it on a plate. Garnish with a drizzle of Mexican Crema and cilantro. Serve and enjoy.
Recipe Notes

This pizza was by far the favorite of my family.  They loved the crust.  I did roll the crust out thinner than what I would normally do a pizza crust.  We love thin crust pizza so that's why I did it this way.  You can make this pizza as spicy or as mild as you want.  It's great for lunch the next day or even a midnight snack.  Get the kids involved in helping as well.  They will enjoy helping out making something that most kids love to eat.
