Tabouleh

This stuff makes me so happy. Simple, savory, healthy, and so yum. Bulgar wheat can be found raw or processed. Raw takes longer,  obviously, so plan for that if you decide to use it. Otherwise, there isn't a whole lot to say about this one, other than have fun with it!!! Great as a side dish, like the picture, or as lunch, which is my choice!!!! C'mon, let's eat.

Ingredients
  • 1 cup bulgar wheat (dry)
  • 1 1/2 cup boiling water
  • 1 1/2 tsp salt
  • 1/4 cup fresh lemon and/or lime
  • 1 tsp crushed garlic (heaping tsp)
  • 1/2 cup scallions (include greens)
  • 1/2 tsp dried mint
  • 2 medium tomatoes (diced)
  • 1 cup fresh parsley (packed cup)
  • 1/4 cup good quality olive oil
  • fresh black pepper
  • 1/2 cup cooked chick peas (optional)
  • 1/2 cup coarsely grated carrots (optional)
  • 1 chopped green pepper (optional)
  • 1 chopped cucumber (optional)
Instructions
  1. ***If using traditional bulgar wheat:*** Combine bulgar, boiling water, and salt in a bowl. Cover and let steam for 15-20 minutes, or until malleable. ***Processed bulgar:*** Combine 2 cups water, 1 cup wheat, salt, and bring to a boil. Cover and simmer 12 minutes, or until malleable.
  2. Add lemon juice, garlic, oil, mint, and parsley, mixing thoroughly.
  3. Refrigerate at least 3 hours.
  4. Right before service, add the remaining vegetables, mix gently, and correct the seasoning balance.
  5. Garnish with feta and olives.
