So I ran into a snag with the fruit on this. I had to use canned peaches instead of fresh or frozen. Our state got shut down and put on a freeze again due to covid-19. So I am trying something new with this. I will be doing Brach’s cinnamon hard candies instead of red hots and I am going to use pink blush wine and a little bit of the syrup from the peaches to melt the candies down. I am also going to add some oats to the crumble topping and a little brown sugar.
This drink is for those that like to sip on whiskey or bourbon. The peaches add just a touch of sweetness and a wonderful peachy essence. I added some fresh sweet raspberries to add some color and flavor. This would be perfect to enjoy during the hot summer months. For a fun twist, you could use peach or apricot sorbet!
A sweet, fruity, and warm peach cobbler with a golden crust. A scoop of vanilla ice cream to top it off will enhance the summertime.
The glaze for this dish is sweet, smoky, tangy and screams southern! I used it on a 1.5 lb piece of salmon but there was plenty left over.
