Here in Hawai’i we enjoy a traditional dessert called Haupia, which is basically sweet coconut pudding. Well today I’d like to share a traditional recipe with a modern day twist! The steps are simple and the best part is you don’t need an oven! The buttery-sweet crust is filled with a creamy haupia and chocolatey filling and topped with homemade whipped cream. Your mouth will be happy, happy, happy after you try this Hawaiian speciality! It’s “Broke Da Mouth” that’s our way of saying delicious in Hawai’i!!! Enjoy!

Crust
- Preheat oven to 375 degrees F.
- Place graham crackers in a large food processor or blender. Pulse into fine crumbs. (If you don't have one, you can place crackers in a large ziplock bag and use a rolling pin to crush them into crumbs.)
- Pour crumbs into a bowl and add melted butter. Mix well. Pour into a pan (this recipe will fit in a 9 x 13 cake pan or two 9 inch pans)
- Use your fingers or back of spatula to press crumb mixture on the bottom of the pan. Try to make the crust as even and smooth as possible. Bake at 375 degrees for 7 mins. Set aside and allow to cool before adding filling. Haupia Filling
- In a small sauce pan combine milk, coconut milk, and sugar and simmer over medium heat until sugar dissolves. Lower heat and add cornstarch slurry, stir until thickened then remove from heat. Set haupia aside.
- Place chocolate chips in a heat safe bowl and place over a pot of boiling water (double boiler). Mix chocolate until completely melted.
- Divide haupia mixture in half and add melted chocolate. Mix well. Pour over prepared crust, make sure to make a smooth and even layer. Refrigerate for 15-20 minutes.
- Once chocolate layer has set add remaining haupia mixture. Making sure this layer is smooth and even also. Refrigerate until haupia has set, approximately 15-20 minutes. Whipped Topping
- In a clean chilled bowl, add heavy cream and powdered sugar and whip until firm peaks form. You can pipe whipped topping over the chilled chocolate-haupia pie or create an even and smooth layer of whipped cream, it's totally up to you!
