When I first looked at this recipe and saw that it had mashed potatoes in it, I was quite curious to say the least! There’s such a small amount in comparison to the other ingredients that they don’t contribute to the taste at all. Merely just a bonding agent. If you love coconut and chocolate these are great for a little snack and to curb your sweet tooth!

- Add all ingredients into a bowl, and mix well to combine. Form into rolls.
- Over a double boiler, melt the chocolate until completely smooth and melted.
- Using a mini muffin tin, place a small amount of chocolate into the bottom of the tin. Place the coconut rolls into the center of each spot. Then cover each piece with the chocolate. Spread to even the tops.
- Refrigerate until completely hard.
