I have never heard of having cottage cheese with scrambled eggs before. This dish was from the 60’s or 70’s time frame. I decided to make it into something totally different. I made this into an egg omelet. It was delicious.

- Crack and scramble the 4 eggs. Add the liquid from the cottage cheese and mix well.
- Spray your skillet with nonstick cooking spray. Add the eggs to the hot skillet. Cook like a normal omelet.
- Add the cottage cheese while the eggs still have a somewhat liquid center. Top with the browned breakfast sausage, and more cheddar cheese.
- Fold one side of the omelet over the other to make a crescent shape. Cook the eggs until there is no longer any liquid egg. Remove from heat and serve on the plate and enjoy.
Notes
This is an interesting way to try cottage cheese in a different way. In the 60's and 70's the idea was cottage cheese and eggs mixed together not in an unique way. So today I decided to make this into an omelet. You could add vegetables too if you wish and you could make it spicy. This is a dish that can handle versatility of ingredients. Just get in the kitchen and get creative and cook. I would highly recommend that you try this dish.
