Mary’s Cabbage and Rice

Ingredients
  • 1 cup rice
  • 2 cup water
  • 2 tbsp butter (divided)
  • 1/4 head of cabbage (shredded)
  • 1/2 yellow onion (diced)
  • 1/2 cup bell pepper (diced - any color you like)
  • 1 salt & pepper (to taste)
Instructions
  1. In a large saucepan melt 1 tbsp of butter, add onion and bell peppers, saute till onion is soft
  2. Add cabbage and saute 3-5 minutes
  3. Add next tbsp of butter and melt
  4. Add salt and pepper
  5. Add rice and saute for 2-4 minutes
  6. Add water and bring to a full boil
  7. Reduce heat to simmer
  8. Cover and simmer for 18 minutes. Serve and enjoy
