Strawberry-Peach with Pineapple

A blast of the Tropics will envelop your mouth and wake up your taste buds, with this sweet, refreshing summer treat! The familiar flavors of strawberry and peach, coupled with the tang of one of my favorite tropical fruits, the pineapple! This will look beautiful, served in glass dishes, with a pineapple reduction sauce, drizzled over the top, and with a strawberry and peach slice, to garnish! You could also easily infuse one of the two elements of this cool dessert, with white rum, as a treat for adult gatherings!

  • Place Kitchen Aid Ice Cream Maker, attachment bowl in freezer for at least, 15 hours. Note: For best results, turn freezer to the coldest setting and place bowl in the back/bottom of freezer.
  • Sorbet Batter
  • Measure all ingredients.
  • In a large, mixing bowl, combine the sodas, sweetened condensed milk and crushed pineapple.
  • Blend well.
  • Cover and place bowl in refrigerator to chill, thoroughly. Note: For quicker chill time, place bowl in freezer. Just until chilled.
  • After batter has thoroughly chilled, remove the stand mixer bowl from the freezer.
  • Attach paddle and bowl to stand mixer, according to the manufacturer's instructions.
  • Remove batter from refrigerator.
  • Turn stand mixer on to the "stir" (lowest) setting.
  • As the paddle is rotating, slowly pour in chilled batter.
  • Mix for 20-30 minutes, until desired consistency.
  • Remove bowl from stand mixer.
  • Remove paddle from center of bowl.
  • Transfer sorbet mixture to a shallow container.
  • Cover and freeze for 2-4 hours, until set.
  • Serve when sorbet has reached the desired firmness.
  • Pineapple Reduction
  • Pour pineapple juice into a small saucepan, set to med-high heat.
  • Allow juice to come to a full rolling boil for 3-5 minutes. Stirring occasionally.
  • Reduce heat to low and let simmer until desired thickness.
  • Once reduction has reached the desired thickness, remove pan from heat and immediately pour into a heat resistant container.
  • Let reduction cool, thoroughly.
  • Pour reduction into a squeeze bottle. Or, a container with a pour spout.
  • Serve
  • Optional: Drizzle pineapple reduction over a scoop of sorbet and garnish with fresh strawberries and/or peach slices.

Notes

You can use any combination of fruit sodas, fruit juices and fruit! Be creative! Have fun!
