These cookies are SUPER rich and normally a 1/2 a cookie is all I need to be more than satiated. Their chewy goodness is out of this world. Let them cool so they harden up some, they’ll be super soft and easily breakable out of the oven. Coconut haters, I promise you absolutely cannot taste the coconut in these, it’s only there for the chewy texture, LOL I swear it’ll be ok cause guess what …. I don’t like coconut either.

- Heat oven to 350 and grab your hand mixer
- Take the cup of chips that were set aside place them in microwave safe bowl big enough to handle the entirety of the batter and put it in the microwave for on high for 1 minute .... give them a stir and put them back in another 30sec to 1 minute until fully melted --- TIP ~ Stirring them around disperses the heat and aids the others in melting
- Add the butter to the chocolate and mix until butter is fully melted
- Add eggs and vanilla and mix until combined
- Add everything else in and get it all mixed up
- Parchment paper your baking trays -- this recipe takes me 2 20 1/2 x 14 1/2 sheet pans
- Grab a 1/3 cup measuring cup and scoop these out (I use a rubber spatula to help me get it out of the cup) 4 inches apart on your baking tray, flatten them out if they're clumped in a ball
- Bake 15 min or until edges are lightly browned ..... I've never gone more than 18min on a batch
- Give them 2 minutes in the pan before you pull the parchment paper to a wire rack to cool Grab a glass of milk ~ you're going to need it ~ and enjoy
